Elizabeth Lachlan Pastries is a baking business specializing in custom
cakes, cookies, and pastries. Our focus is on producing unique, custom-designed cakes. We also bake custom-designed cookies,
and delicious seasonal cookies & pastries, hand-made from scratch.
Owner Amy Cotten has been baking all her life. She was taught
to bake by her Mother, Grandmothers, and Aunt, and continued learning while working in pastry kitchens to fund her college
education, a Bachelor of Arts degree in Political Science, from Stephen F. Austin State University. While in college,
she taught basic and advanced cake decorating classes to hundreds of students across East Texas as an instructor with the Community
Services Department at Angelina College. Following graduation, she managed a gourmet bakery in Houston, then left the industry
for the 9-5 world of Insurance Underwriting, then the 24-hour world of stay-at-home motherhood. In 2006, the call of the ovens
proved too strong, and Elizabeth Lachlan Pastries was born.
Amy has a natural ability to look at things of all sizes & shapes
with a "how can I make that into a cake?" viewpoint.
Cake sculpting is a unique art. It is temporary. That is the point
- that something so fantastic and lifelike can be constructed from things as fragile as cake and icing, and can be absolutely
delicious!
